100% Sauvignon Blanc The average age of our Sauvignon vines is 40 years-old (Pouilly-Fumé) and more than a hundred years-old for our Chasselas vines (Pouilly-sur-Loire).
Aromas of chamomile, honey, and stone fruit give way to a rich, full-bodied palate of ripe pear and fresh meyer lemon. The wine is balanced by a pronounced acidity and delineating mineral note - silex - that elevates this Sauvignon Blanc into a class of its own.
A dry white wine with fruity aromas (exotic fruit, passion fruit, citrus), smoky notes (flint stone) and floral nuances (broom, boxwood, blackcurrant buds). It reaches its aromatic peak quite young, at 2 to 5 years and becomes unctuous as it ages. Pouilly-Fumé is served at 10-12°C. This wine is ideal as an aperitif but also a wonderful match with shellfish, fish (in sauce or grilled), white meat, roasted poultry and cheese.
Our Domaine is mostly located on kimmeridgian marl soils, also known as “Terres Blanches” (chalky soil), a hint of Barrois limestone and a small but precious vein of flint: beautiful soils which are expressed and revealed in our different cuvées.
ur reasoned and committed practices aim to preserve this environmental heritage: High Environmental Value certification (HEV), ploughing, earthing-up and earthing-down, no chemical weeding, optimal use of biocontrol (e.g. sexual disorientation against grape worms); etc.
