TASTING NOTES
Pink pale and bright color. Intense nose of fresh strawberry, small red fruits and white peach. Round on the palate, this rose is well balanced thanks to its pleasant acidity To be enjoyed as an aperitif or accompanied by grilled meats.
The grapes are harvested at night at the coolest, autumnal temperatures. The cellar was built in the 19th century. It is nowadays well equipped with a high technology, brand new cellar, that was created in 2020. Stainless steel tanks, temperature
control, high tech pneumatic press improved the winemaking process. The aim is to express the terroir at its best. Each plot comes to one single tank. Once the grapes are harvested, they go directly to the press. The juice settled down for 2 days. Then
the clearest juice goes for a fermentation. The fermentation takes place in stainless steel tanks, at a low temperature. Ageing is not long. We like to bottle our rosé wines very early , to capture all the fruity aromas. There is no residual sugar after fermentation, as we like the freshness, and vivid wines.
The harvest takes place usually mid September, which is quite late for the region. A variety of different clayrich, gravellous plots, result in a nice complexity of wines.
